This product won the Gold Award in the Professional Division of the Darmein Marmalade Awards Japan Competition.
The inspiration for this creation came while I was preparing the red beans for anpan for my husband during the process of making my entry for the awards—I was reminded of the “Hassaku Daifuku” I had made previously.
I wondered what would happen if I combined “Rino Ka” marmalade with azuki beans that were just short of becoming a smooth paste—still retaining their texture—so I added them to the pot as a finishing touch.
By layering memories and sensations of traditional Japanese sweets onto marmalade, which originated in England, I’ve created a new flavor that bridges the gap between Western and Japanese culinary traditions.
Every day, I make sweets using seasonal fruits.
I don’t view marmalade as merely a preserved food; I create it as a small dessert that captures the essence of the season and my memories.
